Almond Coconut Tahini Date BALLS!

These balls are addictive!  I’ve made these balls using a bunch of different ingredients before.  I’ve made these ones Whole 30 compliant, but you can always change it up with different nut butters, adding in raisins or other dried fruit, sweetening it up with some dark chocolate chips, dropping in some vanilla extract – so many possibilities.

But, Jooooooo, I hate pitting, soaking, and blending Medjool dates; it takes FOREVER!  Well, hey yo!  Here’s a LINK FOR DATE PASTE that you can get on Amazon.  Or you can sometimes find date paste at your local ethnic food market.  Date paste is most commonly used in middle eastern cuisine.  It saves you tons of time and is simply blended Medjool dates.


1 cup finely chopped unsalted raw almonds

1 cup date paste or 15-20 pitted, soaked, and blended Medjool dates

1/2 cup unsweetened shredded coconut (if you wanna be fancy, you can even toast it beforehand!)

1/2 cup tahini

1/2 teaspoon salt

Combine all ingredients in a big bowl and mix it all together with your hands until well combined.  Refrigerate dough for a couple hours until it is fully chilled.  Form dough into balls at desired thickness.  Balls are doooone, maaaan!  

Keep these refrigerated and they’ll last awhile.  Careful making too big of a batch at one time, as they are easy to grab and snack.  The sugar content of one Medjool date is around 5g, so eat these in moderation.  The fiber does slow the sugar absorption, though, so it’s always better to cook with fruit than syrups.
