While trying to get my blog back up and running, I thought I’d first post my favorite easy healthy cookie recipe that has been my go-to for the past year. These cookies have no added sugar (unless you like to add in some dark chocolate chips which really kick it up a notch BAM!), are naturally sweetened, and take a quick second to prepare. Quick note, if you opt to use cashew or another drier nut butter (HA!) you will need to add a lil bit of coconut oil to soften it up.
Ingredients
2 large overripe bananas
2 cups rolled oats
1/2 cup natural nut butter (no added sugars or oils, a lil salt is ok)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
optional: 1/2 cup dark chocolate chips, shredded coconut, or raisins
Mash bananas in large bowl until they form a paste. Add in nut butter, vanilla, and cinnamon and mix well. Mix in rolled oats and any optional additions. Refrigerate for 30 minutes. Preheat oven to 350 degrees. Roll 1″ balls of dough and flatten on lined cookie sheet. Bake cookies in center rack for 10-12 minutes. Even slightly singed and these bad boys taste great! Serve with a glass of ice cold whole milk.
